This might be either an insult or a creative twist to the sacred Italian pesto alla Genovese. All the traditional ingredients are present, however avocado is added to create a smooth and creamy texture. I know that you are thinking that avocado is now literally in every dish imaginable, but trust me that in this case avocado is added for a purpose and not only to be trendy.
Ingredients for a sauce for 4 servings:
- 40 gr. of pine nuts (leave some for the decoration)
- 1 large ripe avocado
- two handful of basil (you can add more or less depending how strong you want the flavour of basil to be)
- 4 tablespoons of extra virgin olive oil
- salt and pepper
- 60 gr. of pecorino (leave some for decoration)
If this recipe hasn’t convinced you yet, give it a try as you will lose just 10min of your time (yes, not only is it healthy but also quick and easy). Add all the ingredients into a blender and blend until smooth. Do not be too generous with the pecorino as it tastes very salty and could hide the flavour of the other ingredients. Once you obtain a smooth and creamy texture, add the avocado pesto to your pasta and finish of by decorating with some pine nuts and pecorino.
