Zucchini Omelette Roll

Ingredients:

  • 600g of zucchini
  • 200g of Philadelphia (or any other cream cheese)
  • One big tomato
  • 4 eggs
  • Some salt

Method:

1.Cut the zucchini into julienne strips and mix them with four eggs;

2.Put everything into a baking tin lined with parchment paper, then put it in the oven and bake it at 180°C for about 30 minutes. 

3.Spread some Philadelphia on top and add some slides of tomato, then roll it up.
