This is a typical dish from Friuli: a cheesy potatoes cake. Maybe it’s a little heavy but tasty and… VEGETARIAN!!
700 grams boiled and cutted or grated potatoes
500 grams Montasio cheese
1 onion (we used shallot)
Extra virgin olive oil
Salt and pepper
Heat the olive oil in a non-stick pan and add the onion and the potatoes and cook until they begin to brown.
Spread the cheese evenly over the top and continue cooking until the frico sets up.
Turn it out onto a dish and slide it back into the pan to cook the other side until golden brown.
