Hasselback potatoes


Have you ever tasted one? A single potato, sliced into thin wedges but left joined at the bottom, baked until the layers fan out into round of crispy heaven.

First of all, we have to thank the Swedes for this amazing invention, and in particular the chefs at Restaurant Hasselbacken!

They are also called Accordion Potatoes or Pillbug Potatoes.

Usually they are served as a side dish.. Gosh, you must be very hungry! Anyway they are pure lush!

If you’re tired of the classic roasted potatoes, you must try this recipe!


-8 potatoes

-60 grams butter (melted)

-chopped aromatic fresh herbs (rosemary, thyme, sage)



-50 grams diced bacon



Preheat the oven to 210°C. Bring a large pot of salted water to a boil. Then ass the potatoes to the boiling water and cook 5 minutes. Remove with a slotted spoon and let them cool.. Place a potato on a cutting board with wood skewers on each side (lengthwise).  Slice potato about 3/4 of the way through.  The skewers will keep you from cutting all the way through.


Pour the melted butter over each potatoes, add season with salt and pepper. Put into their thin slices the diced bacon. Bake for 25 minutes and then add the chopped herbs. Put them again in the oven for other 10 minutes.
